This consolidated PDF is provided for reference purposes only and may not always reflect the official, up-to-date version of the Code. The document will be updated whenever a change is gazetted through an application or proposal. The authoritative version of the Code is located on the FSANX website at https://www.foodstandards.gov.au/food-standards-code/legislation#compilation

FSANZ Compendium of Microbiological Criteria for Food

FSANZ has released an updated Compendium of Microbiological Criteria for Food — a key resource compiling process hygiene criteria for specific food commodities and microbiological guideline criteria for ready-to-eat foods.

It replaces the earlier Guidelines for the Microbiological Examination of Ready-to-Eat Foods and the User Guide to Standard 1.6.1.
Updates are made periodically as new criteria are developed.
The July 2025 update includes new guidance for seafood and cell-cultured foods.
